Avocado Toast with Feta, Cherry Tomatoes, Cranberries and Grenoble Nuts

 

Ingredients :

  • 2 ripe avocados, cut in half and drained
  • 2-4 slices of country bread, toasted
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup feta cheese, shredde
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup Grenoble nuts, chopped
  • Salt and pepper to taste
  • 1-2 teaspoons of lemon juice
  • Fresh herbs (parsley or basil, for garnish)

Instructions:

Preparing the Avocado:

Take out the avocado meat and crush it with a fork or slice it into thin slices, however you prefer.

Mix with lemon juice, salt and pepper to add zest.

Toasting the Bread:

Grill the Country Bread Slices until they reach your preferred crunch level.

Assemble the Toast:

Generously spread the crushed avocado or avocado slices on each slice of toast.

Arrange the cherry tomatoes cut in half on the avocado.

Sprinkle crumbled feta, chopped cranberries and chopped grenoble nuts.

Finish and Service:

Add a pinch of salt and black pepper to your liking.

Top with a few fresh herbs like parsley or basil for a pop of color and flavor.

Serve right away and enjoy these fresh, vibrant flavors!

Tips:

Add a fillet of balsamic vinegar or honey for a sweet and tangy twist.

Top with a poached egg or fillet extra virgin olive oil for more protein and richness.
