Avocado & Egg Salad with Cherry Tomatoes
Ingredients:
- 2 large ripe avocados, cubed
- 2 large boiled eggs, quartered
- 1 cup cherry tomatoes, halved
- ¼ cup red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon or lime juice
- Salt & black pepper, to taste
Instructions:
Prepare the ingredients:
Cube the avocados, quarter the boiled eggs, and halve the cherry tomatoes.
Finely chop the red onion and cilantro.
Mix the salad:
In a large mixing bowl, gently combine avocado, eggs, tomatoes, onion, and cilantro.
Dress the salad:
Drizzle with olive oil and lemon juice.
Season with salt and black pepper.
Serve immediately:
Enjoy as a fresh side dish or light meal.
