Avocado Egg Salad Recipe

Ingredients:

  • 2 ripe avocados, diced
  • 2 hard-boiled eggs, sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 small cucumber, diced (optional)
  • Fresh parsley or cilantro, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon or lime juice
  • ½ tsp dried oregano
  • Salt & black pepper, to taste

Instructions:

Prep the base: Place the diced avocado, cherry tomatoes, cucumber, and red onion in a large bowl.

Add protein: Gently mix in the sliced hard-boiled eggs.

Season: Drizzle olive oil and lemon juice over the salad. Sprinkle with oregano, salt, and black pepper.

Toss & Serve: Gently toss everything together to coat evenly. Garnish with fresh parsley or cilantro.

Enjoy: Serve chilled as a light lunch, side dish, or even as a topping for toast.
