Avocado Corn Tomato Salad Recipe
Ingredients:
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1 cup sweet corn (fresh, frozen, or canned)
- 1/4 cup chopped fresh cilantro or parsley
- 1/4 cup finely chopped red onion (optional)
- Juice of 1 lemon or lime
- 2 tbsp olive oil
- Salt and pepper to taste
- ️ Optional: a pinch of chili flakes for heat
Instructions:
In a large bowl, gently combine the avocado, cherry tomatoes, and corn.
Add the chopped herbs and onion if using.
In a small bowl, whisk together lemon/lime juice, olive oil, salt, and pepper.
Drizzle the dressing over the salad and toss gently to coat.
❄️ Chill for 10–15 minutes for best flavor, or serve immediately!
Tips:
Add black beans or quinoa for a protein boost.
Serve with grilled chicken or fish for a full meal.
