    Meat pies have long been a staple meal around the globe, just look at the enduring popularity of shepherd’s pie, pot pie, and taco pie for examples. But, this country pie has layer of beef and vegetables as the crust, with a filling of tomato sauce, rice, and cheese. This is simple, hearty, filling food that happens to also be extremely tasty.

    The crust of the pie is made from brown ground beef combined with raw onion and bell pepper and some breadcrumbs. I used the Italian variety of breadcrumbs since it adds more flavor to the finished recipe. If you wanted to add any other veggies or spices, this step would be a great place to do it.

    Once you have the crust mixed up press it into the bottom of a 9″ square baking dish and up the sides.

    For the filling a simple shortcut of Minute rice (combined with tomato sauce and cheddar cheese) makes this a super easy dish.

    To make sure the rice cooks in the oven you’ll need to add some more sauce on top. After it’s mostly done baking, the last step is to sprinkle on some cheese and bake it just long enough to melt it.

    2. In a large bowl combine 1/2 cup tomato sauce with beef, bread crumbs, onion, salt and pepper to taste, bell pepper, and oregano. Spread this on the bottom of a deep pie pan or 9”x9” baking dish – taking it halfway up the side of the dish.
    3. In another bowl combine remaining tomato sauce with rice, water, and 1/2 cup cheese. Add rice on top of beef “crust” and level with back of spoon. Top with remaining tomato sauce. Bake for 25 -35 minutes or until rice is cooked. Add remaining cheese and bake for 10 minutes more or until cheese is melted.

    500 ml of milk / 2 cups (17 fl.oz)
    200 grams of flour / 11 tablespoons (7 oz)
    2 tablespoons of potatoes
    3 eggs
    Breadcrumbs
    Butter

    Instructions:

    Begin by peeling and boiling three potatoes until tender.
    Mash the boiled potatoes to a smooth consistency.
    Slice one onion and sauté it in sunflower oil until translucent.
    Add one sliced pepper to the pan and continue frying until tender.
    Season with salt and black pepper to taste.
    In a separate bowl, beat two eggs with salt and 1/2 tablespoon of sugar.
    Mix in 500 ml of milk and 200 grams of flour until a smooth batter forms.
    Heat sunflower oil in a pan and pour a small amount of the batter to make thin pancakes.
    Fry the pancakes until they turn golden brown on both sides.
    To assemble, serve the pancakes with a generous portion of mashed potatoes, fried onions and peppers.
    Sprinkle 100 grams of cheese and chopped spring onions over the dish.
    Optionally, top with breadcrumbs and bake in the oven with a dab of butter for added crunch.

    For the custard cream (crema pastiera):

    • 3 egg yolks
    • 3 tablespoons 30 gr of all-purpose flour
    • 1/2 cup 100 gr of sugar
    • 1 teaspoon of vanilla extract
    • 8 oz 235 ml of milk

    For the cannoncini:

    • 1 sheet of puff pastry defrosted (about 8 oz, 225 gr)
    • 1/4 cup 50 gr of sugar
    • 1 egg for egg wash
    • powdered sugar to decorate

    Instructions

    Start by preparing the custard cream (crema pastiera):

    • Warm up the milk until hot (not boiling).
    • In a medium-sized pan, whisk the egg yolks with the sugar, vanilla extract, and flour, until light and fluffy.
    • Add the milk some at a time while whisking, making sure there are no lumps.
    • Set the pan over mediocre heat and stir continuously until it reaches a slow boil. The cream will thicken, so be careful not to let it stick to the bottom. Lower the flame and cook for a couple of more minutes, until you reach the desired thickness.
    • Pour the cream into a glass bowl, cover with plastic wrap, and let it cool down. Chill for at least one hour.

    For the pastry horns:

    • Preheat the furnace to 400°F (200°C).
    • Spray some sugar on the counter and on top of the puff pastry and roll it out to a rectangle about 9 by 12 inches.
    • Cut into 12 strips (about 1 inch thick). Easy way to do it: cut the pastry into three parts, and then each part into four strips.
    • Roll each strip onto a horn mold (conical in shape). The pastry has to overlap (about half of the length).
    • Place on a baking sheet lined with parchment paper with seem (end of the strip) side down.
    • Beat one egg with one tablespoon of water. Brush lightly each pastry cone with the egg wash.
    • Make sure you keep the egg wash away from the mold. It will make it harder to remove the pastry horn from the mold once baked.
    • Bake at 400°F (200°C) for about 15-20 minutes until golden on top.
    • Let them cool down for a couple of minutes and gently remove from the mold.

    Four Ingredient Nougat Bars – I recall growing up and seeing this treat on the dessert table every holiday. This was one of those desserts that was saved for adults only.

    I never did understand that as I was growing up. When I got older, I started making this treat myself and although I do not understand why it was an adult only treat, I understand why they kept it all to themselves.

    Ingredients

    • 2 packages of miniature marshmallows
    • 2 tbsp butter, melted
    • 2 packages of white chocolate chips
    • 1 ½ cups red and green gumdrops

    How To Make Four Ingredient Nougat Bars

    FIRST STEP:

    Cut the gum drops in half

    Layer a baking dish with parchment paper, be sure there is enough paper hanging over the sides

    Bring a pot of water to a boil on the stove

    SECOND STEP:

    Place a heat proof bowl or another pan over the first pot with the water

    To the top dish add in the miniature marshmallows, the white chocolate chips and the butter

    Melt the ingredients in the pan, over( or rather like a double boiler)

    Stir until all is melted

    THIRD STEP:

    Gently fold in the gumdrops

    Pour into the baking dish with the parchment paper

    Let rest overnight so the nougat sets

    Lift out of the baking dish using the parchment paper, cut into bars

This would not be one of my favorites if it tasted disgusting. So bear with me and give this a try. I had actually received this from a very dear friend. His mother used to make it for the family on special occasions. When she passed on, he wanted to pass on one of her best and favorite recipes.

    Ingredients

    • 2 packages of softened and room temperature cream cheese.
    • 1 can crushed pineapple, drained very well
    • ½ cup chopped green onions
    • ½ cup chopped green pepper
    • 1 tsp seasoning salt
    • 1 tsp lemon pepper seasoning
    • 2 cups pecans, chopped nicely
    • Assorted crackers

    How to Make Heavenly Pineapple Cheeseball

    FIRST STEP:

    In a large bowl, beat the cream cheese until it is smooth

    Gently fold in the vegetables

    SECOND STEP:

    Add the seasonings

    Add ½ cup chopped pecans

    THIRD STEP:

    Place this on a sheet of plastic wrap, roll and shape the cheese into a ball.

    Refrigerate overnight

    FOURTH STEP:

    Just before serving, roll the ball into the remaining chopped pecans

    Set the ball onto the center of a plate and surround it with a variety of crackers
