Air Fryer Tea Loaf with Sultanas and Cherries
Ingredients:
- 1 mug of tea (no milk)
- 1 mug of self-raising flour (SR flour)
- 1 mug of sultanas (raisins can also be used)
- 1 egg
- Optional: glacier cherries (for added flavor and color)
Instructions:
- Prepare the Sultanas:
- Pour the tea into a bowl and soak the sultanas (and optional glacier cherries, if you’re using them) in the tea for at least 15-20 minutes. This will soften them and infuse them with the tea flavor.
- Mix the Ingredients:
- After soaking, crack the egg into the bowl and stir it in.
- Gradually add the self-raising flour to the mixture and mix everything together until you have a smooth, slightly thick batter.
- Prepare the Air Fryer:
- Preheat your air fryer to 180°C (350°F).
- Lightly grease a cake pan that fits into your air fryer basket, or line it with parchment paper to prevent sticking.
- Bake in the Air Fryer:
- Pour the batter into the prepared cake pan, spreading it out evenly.
- Place the pan into the air fryer basket and bake for 20 minutes at 180°C.
- After 20 minutes, check the loaf with a toothpick or skewer. If it comes out clean, the loaf is ready. If not, bake for another 5 minutes and check again.
- Cool and Serve:
- Once baked, carefully remove the cake pan from the air fryer and let the tea loaf cool slightly before removing it from the pan.
- Allow the loaf to cool completely on a wire rack before slicing.

- Adding Fruit: You can add more dried fruits like currants, raisins, or any dried berries for extra flavor and texture.
- Air Fryer Models: Cooking times may vary depending on your air fryer’s make and model, so keep an eye on the loaf to avoid overbaking.
