Air Fryer Tea Loaf with Sultanas and Cherries

Ingredients:

  • 1 mug of tea (no milk)
  • 1 mug of self-raising flour (SR flour)
  • 1 mug of sultanas (raisins can also be used)
  • 1 egg
  • Optional: glacier cherries (for added flavor and color)

Instructions:

  1. Prepare the Sultanas:
    • Pour the tea into a bowl and soak the sultanas (and optional glacier cherries, if you’re using them) in the tea for at least 15-20 minutes. This will soften them and infuse them with the tea flavor.
  2. Mix the Ingredients:
    • After soaking, crack the egg into the bowl and stir it in.
    • Gradually add the self-raising flour to the mixture and mix everything together until you have a smooth, slightly thick batter.
  3. Prepare the Air Fryer:
    • Preheat your air fryer to 180°C (350°F).
    • Lightly grease a cake pan that fits into your air fryer basket, or line it with parchment paper to prevent sticking.
  4. Bake in the Air Fryer:
    • Pour the batter into the prepared cake pan, spreading it out evenly.
    • Place the pan into the air fryer basket and bake for 20 minutes at 180°C.
    • After 20 minutes, check the loaf with a toothpick or skewer. If it comes out clean, the loaf is ready. If not, bake for another 5 minutes and check again.
  5. Cool and Serve:
    • Once baked, carefully remove the cake pan from the air fryer and let the tea loaf cool slightly before removing it from the pan.
    • Allow the loaf to cool completely on a wire rack before slicing.
