Ingredients:
2 medium potatoes, grated
Salt, to taste
4-5 leaves of green onions, finely chopped
1/2 tablespoon of red hot pepper flakes
50-60 grams of cheddar cheese, grated
1-2 tablespoons of starch (cornstarch or potato starch)
Directions:
Prepare the Potatoes: Wash and peel the potatoes. Grate them into thin shreds using a grater. Place the grated potatoes in a clean dish towel and squeeze out as much moisture as possible.
Mix Ingredients: In a large bowl, combine the dried grated potatoes, chopped green onions, red hot pepper flakes, and grated cheddar cheese. Season with salt to taste. Sprinkle the starch over the mixture and toss everything together until well combined.
Form into Balls: Take small portions of the potato mixture and form them into balls. Compress them firmly so they hold their shape.
Cook: Heat a non-stick frying pan over medium heat and lightly oil it. Place the potato balls in the pan and flatten them slightly with a spatula. Cook for about 3-4 minutes on each side or until they are golden brown and have puffed up like a balloon.
Serve: Serve these cheesy potato balloon bites hot, with a dipping sauce of your choice or simply on their own. They make a great snack or a side dish to any meal.
