Ingredients:

    • 3 English potatoes (small potatoes)
    • 200 g of grated fresh cheese (mozzarella or parmesan or other of your preference)
    • 1 chopped red onion
    • 1 carrot grated on the middle part of the grater
    • 700g chopped green cabbage
  • Green onion to taste
  • 100g bacon (optional)
  • Salt and black pepper to taste
  • Vegetable oil or olive oil

Preparation method:

Peel the potatoes and cut them into thin slices (blades) lengthwise.

Line a baking sheet with parchment paper and spread half of the grated cheese evenly.

Place the potato slices on the baking sheet, on top of the cheese, so that they are slightly overlapping (as shown in the image below) .

Brush with oil or olive oil and season with a pinch of salt.

Bake in a preheated oven at 200°C for 30 minutes. Meanwhile, prepare the filling.

In a pan, fry the bacon until golden brown and set aside. In the same pan, use the bacon fat to sauté the chopped onion and carrot. Add the cabbage and sauté for a few minutes.

Season with salt, black pepper, and chives to taste. Mix well.

Once the potatoes are baked, spread the filling over them. Sprinkle with the remaining cheese, add the fried bacon, and roll up like a Swiss roll, using the parchment paper to help.

Sprinkle a little more grated cheese and green onions on top and return to the oven just to melt the cheese.

Serve immediately as a side dish or main course.
