Ingredients
For the Chicken & Veggies:
-
1 lb (450 g) boneless chicken breast or thighs, cut into bite-sized pieces
-
1 tbsp cornstarch
-
Salt & black pepper, to taste
-
2 tbsp vegetable oil (or sesame oil for extra flavor)
-
2 cups broccoli florets
-
1–2 red chilies (fresh or dried), sliced or left whole for milder heat
-
3 cloves garlic, minced
For the Stir-Fry Sauce:
-
2 tbsp soy sauce (low-sodium recommended)
-
1 tbsp hoisin sauce
-
1 tbsp oyster sauce (optional, but adds richness)
-
1 tbsp honey or brown sugar
-
1 tsp rice vinegar
For Serving:
-
Cooked jasmine rice (1–2 cups)
-
Sesame seeds, for garnish
-
Chopped green onions, for garnish
Instructions
1️⃣ Prepare the Chicken
In a bowl, season chicken pieces with salt, pepper, and toss with 1 tbsp cornstarch until evenly coated. This helps create a light crispy texture when cooked.
2️⃣ Sear the Chicken
Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and sear until golden brown and fully cooked (about 5–6 minutes). Remove chicken from the pan and set aside.
3️⃣ Sauté the Veggies
Add remaining 1 tbsp oil to the same pan. Toss in broccoli and sliced chilies. Stir-fry for 2–3 minutes until broccoli is bright green but still crisp. Add minced garlic and stir for another 30 seconds until fragrant.
4️⃣ Make the Sauce
Lower heat to medium. Add soy sauce, hoisin, oyster sauce (if using), honey, and rice vinegar directly into the pan. Stir well, letting the sauce bubble and thicken slightly (about 1–2 minutes).
5️⃣ Return Chicken to Pan
Add the cooked chicken back into the pan and toss everything together to coat evenly in the sticky garlic sauce. Simmer for another minute to meld flavors.
6️⃣ Serve It Up
Spoon stir-fry over warm jasmine rice. Sprinkle with sesame seeds and green onions for that perfect finish.
