✨ Zesty Lemon Drizzle Cake ✨
Bright, tangy, and moist — this lemon drizzle cake bursts with fresh citrus flavor in every bite, topped with a sweet and zingy glaze. Perfect for afternoon tea or a light dessert!
Ingredients:
For the Cake:

1 cup (225g) unsalted butter, softened

1 cup (200g) granulated sugar

4 large eggs

1¾ cups (220g) all-purpose flour

2 tsp baking powder

Zest of 2 lemons

2 tbsp lemon juice

¼ cup (60ml) milk
For the Lemon Drizzle:

½ cup (100g) granulated sugar

Juice of 2 lemons
Optional Glaze Topping:

½ cup (60g) powdered sugar

1–2 tbsp lemon juice (adjust for consistency)
Directions:
1. Preheat and Prep:

Preheat the oven to 350°F (175°C).

Grease and line a 9×5-inch loaf pan (or a round cake tin).
2. Make the Batter:

In a large mixing bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy.

Add the eggs one at a time, beating well after each addition to ensure everything is well combined.

Mix in the lemon zest and lemon juice for that fresh citrus flavor.
3. Add Dry Ingredients:

In a separate bowl, sift together the all-purpose flour and baking powder.

Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined. Be careful not to overmix as that can make the cake dense.

Poke holes in the cake using a skewer or fork, and then slowly pour the drizzle over the cake so it can soak in. Let it absorb and set.

Once the cake has completely cooled, you can prepare the optional glaze by whisking the powdered sugar with lemon juice until smooth and runny. Adjust the amount of lemon juice depending on how thick or thin you want the glaze.
