Ingredients (Makes 12 fritters / 6 servings)

6 cups cauliflower (chopped & steamed)

1 tbsp garlic (minced)

1 cup white whole wheat flour

2 extra-large eggs (beaten)

½ cup Italian cheese (grated)

¼ cup parsley (finely chopped)

¾ tsp kosher salt

¾ tsp black pepper

2 tsp dried chives

4 tsp olive oil
Instructions
1️⃣ In a large bowl, combine steamed cauliflower, flour, garlic, eggs, cheese, parsley, salt, pepper, and chives. Mix with a spatula.
2️⃣ Heat a large skillet over medium-high heat, then add olive oil.
3️⃣ Using a ¼ cup measure, scoop fritter mix into the skillet and flatten.
4️⃣ Cook 4–5 fritters at a time, for 2½–3 minutes per side, until golden brown.
5️⃣ Repeat until all fritters are cooked.
Pro Tip: To steam cauliflower, add it to a pot with 2½ cups water. Cook for 4–5 minutes, drain, and rinse with cold water to stop cooking.
