Zucchini Corn Fritters
Ingredients:
● 2 medium zucchinis, grated
● 1/2 teaspoon salt (for draining zucchini)
● 1 cup fresh or frozen corn kernels (thawed if frozen)
● 1/4 cup chopped green onions
● 1/2 cup shredded cheddar cheese (optional)
● 2 large eggs
● 1/2 cup all-purpose flour
● 1/4 teaspoon baking powder
● Salt and pepper to taste
● 2–3 tablespoons olive oil (for frying)
● Sour cream or ranch dressing, for dipping
● Extra chopped green onions for garnish
Directions:
I. Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess liquid using a clean towel or cheesecloth.
II. In a large bowl, combine drained zucchini, corn, green onions, cheddar (if using), eggs, flour, baking powder, salt, and pepper. Mix until well combined.
III. Heat olive oil in a large skillet over medium heat.
IV. Scoop 2 tablespoons of batter per fritter into the skillet, gently flattening each one.
V. Cook for 3–4 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.
VI. Serve warm with sour cream or ranch, and garnish with extra green onions.
