Warm and Soothing Ginger Garlic Broth with Noodles
Ingredients:
- – 4 cups vegetable broth
- – 1 tbsp olive oil
- – 1 small onion, thinly sliced
- – 2 garlic cloves, minced
- – 1-inch piece ginger, grated
- – 1 medium carrot, julienned
- – 1 cup bok choy, chopped
- – 8 oz (225 g) rice noodles
- – 1 tbsp soy sauce
- – 1 tsp sesame oil
- – 1/4 tsp red chili flakes (optional)
- – Green onions and sesame seeds for garnish
Directions:
1. Heat olive oil in a pot over medium heat. Add onions, garlic, and ginger, and sauté until fragrant.
2. Pour in vegetable broth and bring to a boil. Add carrots, bok choy, soy sauce, sesame oil, and chili flakes if using.
3. Lower heat and simmer for 10 minutes.
4. Cook rice noodles according to package instructions, then divide them into serving bowls.
5. Ladle the hot soup over the noodles. Garnish with green onions and sesame seeds before serving.
