Verde Wet Burritos

Verde Wet Burritos are a delicious and hearty meal featuring burritos smothered in a tangy green enchilada sauce. These burritos are filled with a savory mixture of seasoned ground beef, black beans, rice, and cheese, then topped with a zesty verde sauce and baked until bubbly.

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 can black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 6 large flour tortillas
  • 2 cups verde enchilada sauce (store-bought or homemade)
  • 1/2 cup sour cream (optional, for garnish)
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • Sliced jalapeños (optional, for garnish)

Directions:

Cook the Meat: Brown the ground beef (or turkey) in a large skillet over medium heat. Remove extra fat. Cook the chopped onion and minced garlic for three to four minutes, or until the onion is tender. Add seasoning to the mixture. Add the paprika, salt, pepper, chili powder, and ground cumin. Mix thoroughly after adding the cooked rice and black beans. Cook for a further two to three minutes, or until well heated.

Put the burritos together: Set the oven temperature to 375°F, or 190°C. Fill the middle of each tortilla with a portion of the meat mixture.

After adding the shredded cheese, wrap the tortillas around the filling and fasten them with toothpicks if necessary. Get ready to bake: Line a baking dish with a thin coating of green enchilada sauce. The filled burritos should be placed in the dish seam-side down. Over the burritos, pour the leftover verde sauce until it covers them completely.

Prepare the burritos by baking them: Bake for 20 to 25 minutes in a preheated oven, or until the cheese has melted and the sauce is bubbling.

Garnish and Serve:

Remove from the oven and let cool slightly. Garnish with sour cream, chopped cilantro, and sliced jalapeños if desired. Serve warm.
