Tropical Pineapple & Coconut Parfait/Trifle
This refreshing dessert features layers of creamy pineapple goodness, sweet whipped cream, and delightful coconut flakes, topped with a cherry for a vibrant finish. It’s perfect for a summer gathering or a light, sweet treat.
Yields: 4-6 servings Prep time: 30 minutes Chill time: At least 2 hours (or overnight for best results)
Ingredients:
For the Pineapple Layer:
- 1 (20-ounce) can crushed pineapple, undrained
- 1 (3.4-ounce) package instant vanilla pudding mix (or coconut pudding mix for extra flavor)
- 1/2 cup cold milk (dairy or non-dairy, e.g., coconut milk for richer flavor)
- 1/2 teaspoon vanilla extract (optional, but enhances flavor)
For the Whipped Cream Layers:
- 2 cups heavy whipping cream, very cold
- 1/2 cup powdered sugar (confectioners’ sugar)
- 1 teaspoon vanilla extract
For the Coconut & Garnish:
- 1 cup sweetened shredded coconut, toasted or untoasted (as desired)
- 1/2 cup fresh pineapple chunks or tidbits (optional, for visual appeal and fresh texture)
- Maraschino cherries, for garnish
Equipment:
- Large mixing bowls
- Electric mixer (handheld or stand mixer)
- Rubber spatula
- Serving glasses (parfait glasses, trifle bowl, or clear dessert cups)
Instructions:
1. Prepare the Pineapple Layer: * In a large bowl, combine the undrained crushed pineapple and the instant pudding mix. * Add the cold milk and vanilla extract (if using). * Whisk vigorously for about 2-3 minutes until the mixture thickens. It will be quite thick and creamy. * Set aside. You can place it in the refrigerator while preparing the cream if you like, but it’s not strictly necessary at this stage.
2. Prepare the Whipped Cream: * In a separate, chilled large mixing bowl (chilling the bowl and beaters beforehand helps the cream whip up faster), pour the very cold heavy whipping cream. * Start whipping on medium speed until soft peaks form. * Gradually add the powdered sugar and vanilla extract. * Increase the speed to medium-high and continue whipping until stiff peaks form. Be careful not to over-whip, or it will become grainy.
3. Assemble the Parfaits/Trifle: * First Layer (Pineapple): Spoon a generous layer of the pineapple mixture into the bottom of your serving glasses or trifle bowl. * Second Layer (Whipped Cream): Top the pineapple layer with a layer of whipped cream. You can pipe it using a pastry bag for a neater look or simply spoon it on. * Third Layer (Coconut): Sprinkle a good amount of shredded coconut over the whipped cream. * Repeat Layers: Continue layering the pineapple mixture, whipped cream, and coconut until your glasses are full, or your trifle bowl is layered to your liking, ending with a generous layer of whipped cream on top. * Add Fresh Pineapple (Optional): If using, scatter some fresh pineapple chunks or tidbits on top of the final whipped cream layer.
4. Garnish and Chill: * For the final touch, place 1-3 maraschino cherries on top of each parfait or arranged on the trifle. * Cover the parfaits/trifle loosely with plastic wrap. * Refrigerate for at least 2 hours to allow the flavors to meld and the dessert to set properly. Chilling overnight is even better for maximum flavor development and a firmer texture.
Serving Suggestions:
- Serve chilled straight from the refrigerator.
- These are best enjoyed within 1-2 days, though they can last up to 3 days in the fridge.
Tips and Variations:
- Toasting Coconut: For an enhanced nutty flavor, spread the shredded coconut on a baking sheet and bake at 325°F (160°C) for 5-10 minutes, stirring occasionally, until golden brown. Let cool completely before using.
- Other Fruits: While the image clearly shows pineapple, you could experiment with other tropical fruits like mango, papaya, or even a mix of tropical fruits for the fruit layer.
- Cake/Cookie Layers: For a more substantial trifle, you could add a layer of cubed pound cake, angel food cake, or crushed shortbread cookies between the fruit and cream layers.
- Coconut Cream: For an even richer coconut flavor, you can substitute a portion of the heavy cream with full-fat coconut cream (chilled, solid part only) for the whipped cream, or use coconut milk in the pudding layer.
- Sweetness Adjustment: Adjust the amount of powdered sugar in the whipped cream to your preference.
- Presentation: If serving in individual glasses, make sure the layers are visible for a beautiful presentation.
