Tomato, Peach, and Burrata Salad
Ingredients
Produce
- 2 ripe peaches, sliced
- 1 ½ cups cherry tomatoes, halved
- 1 cup fresh cherries, pitted and halved
- ¼ cup fresh basil leaves, torn
- 2 tbsp fresh oregano, chopped
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh dill, chopped
- ½ shallot, finely sliced
- 1 clove garlic, minced
- 1 tsp lemon zest
Condiments
- 1 tbsp honey
- Baking & Spices
- Kosher salt and freshly ground black pepper, to taste
- Pinch of red pepper flakes (optional)
- Oils & Vinegars
- ¼ cup balsamic or champagne vinegar
- ½ cup extra virgin olive oil
- Nuts & Seeds
- ¼ cup pumpkin seeds, toasted
Dairy
- 8 oz burrata cheese (about 2 balls)
Instructions
Make the Vinaigrette:
In a small bowl, whisk together the minced garlic, lemon zest, honey, vinegar, and a pinch of red pepper flakes. Slowly drizzle in the olive oil while whisking until emulsified. Season with salt and pepper to taste. Set aside.
Prepare the Salad Base:
In a large bowl, combine the sliced peaches, cherry tomatoes, cherries, shallot, and all the chopped herbs (basil, oregano, thyme, dill). Toss gently.
Dress the Salad:
Pour the vinaigrette over the fruit and tomato mixture. Toss again to coat everything evenly. Let sit for 5–10 minutes to allow flavors to meld.
Assemble the Salad:
Transfer the mixture to a serving platter or bowl. Tear the burrata and gently place over the top. Sprinkle with toasted pumpkin seeds and an extra pinch of salt and pepper.
Serve:
Garnish with extra herbs if desired. Serve immediately with crusty bread or on its own.
