Stellini Pasta Bake with Béchamel 

Ingredients:
For the pasta layer:
250 g stellini pasta (or any small pasta)
1 tbsp olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
250 g ground beef (or chicken/turkey/lamb)
1 cup tomato puree (or passata)
2 tbsp tomato paste
1 tsp dried oregano
1 tsp dried basil
½ tsp paprika
Salt & black pepper, to taste
½ cup grated mozzarella or cheddar cheese
For the béchamel sauce:
3 tbsp butter
3 tbsp all-purpose flour
3 cups warm milk
Pinch of nutmeg (optional)
Salt & pepper to taste
½ cup grated Parmesan cheese
Directions:
1. Cook the pasta
Boil stellini pasta in salted water until al dente. Drain and set aside.
2. Prepare the meat sauce
In a large pan, heat olive oil.
Sauté onion and garlic until fragrant.
Add ground meat and cook until browned.
Stir in tomato puree, tomato paste, oregano, basil, paprika, salt, and pepper.
Let it simmer for 10 minutes until thickened.
3. Make the béchamel sauce
In a saucepan, melt butter.
Add flour and whisk for 1–2 minutes to form a roux.
Gradually pour in warm milk while whisking to avoid lumps.
Season with nutmeg, salt, and pepper.
Stir in Parmesan cheese until smooth and creamy.
4. Assemble the bake
Preheat oven to 180°C (350°F).
In a greased baking dish, spread half the pasta.
Layer with meat sauce, then the remaining pasta.
Pour béchamel sauce evenly over the top.
Sprinkle mozzarella/cheddar cheese.
5. Bake
Bake uncovered for 25–30 minutes until golden and bubbling.
Let it rest 10 minutes before serving.
