Tangy Tzatziki Chicken Salad (Mediterranean Style)
Ingredients:
- 2 cups cooked chicken breast, cubed (grilled or roasted)
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 cup cucumber, sliced or halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup Greek yogurt (plain, full-fat for creaminess)
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh dill, chopped (plus more for garnish)
- 1 tbsp fresh parsley, chopped
- Salt and black pepper, to taste
- Optional: 1/4 tsp crushed red pepper flakes for a slight kick
- Optional: Kalamata olives or chopped cherry tomatoes for extra Mediterranean flair
Instructions:
1. Prepare the Chicken:
If not already cooked, season chicken with olive oil, salt, pepper, and a sprinkle of oregano. Grill or roast until fully cooked and cube into bite-sized pieces.
2. Make the Tzatziki Dressing:
In a bowl, whisk together the Greek yogurt, garlic, lemon juice, lemon zest, olive oil, salt, and pepper. Stir in the chopped dill and parsley.
3. Assemble the Salad:
In a large bowl, combine the cubed chicken, cucumber, and red onion. Pour the tzatziki dressing over and toss until everything is well coated.
4. Chill (Optional):
For best flavor, refrigerate for 15–30 minutes to let the flavors meld.
5. Serve & Garnish:
Sprinkle extra dill or red pepper flakes on top and serve with warm pita bread, over a bed of greens, or enjoy as is!
