Taco Loaded Baked Potatoes Recipe

Ingredients

  • Base Ingredients:

    • 1 pound lean ground beef

    • 46 medium Russet potatoes

    • 1 packet (1 oz) taco seasoning

    • ½ cup water

 

  • Delicious Toppings:

    • 1 cup sharp cheddar cheese, shredded

    • ½ cup sour cream

    • ¼ cup green onions, chopped

    • ½ cup fresh tomatoes, diced

Instructions

  • Bake the potatoes: Scrub and pierce potatoes with a fork, then bake at 400°F (200°C) for 45–50 minutes until fork-tender.

  • Cook the meat: While the potatoes bake, brown the ground beef in a skillet over medium heat until no longer pink. Drain excess grease.

  • Season: Stir in taco seasoning and water. Simmer for 5 minutes, stirring occasionally, until thickened.

  • Assemble: Slice open the baked potatoes and fluff the insides with a fork.

 

  • Top and serve: Spoon seasoned beef onto each potato, then add cheese, sour cream, green onions, and diced tomatoes. Serve immediately while hot.

  • This recipe is highly customizable—feel free to add or swap toppings to suit your taste.
