Sweet Corn Chicken Soup (Quick Version)
Ingredients:
- Chicken breast (shredded) – 1 cup
- Sweet corn (canned or boiled) – 1 cup
- Chicken broth – 4 cups
- Cornstarch – 2 tbsp (mixed with water)
- Ginger (grated) – 1 tsp
- Garlic (minced) – 1 tsp
- Salt & pepper – to taste
- Spring onions (chopped) – for garnish
- Soy sauce – 1 tbsp (optional)
- Egg (beaten) – 1 (optional)
Instructions:
1. Boil chicken in broth with ginger and garlic until cooked.
2. Add sweet corn.
3. Pour in cornstarch slurry, stir till soup thickens.
4. Add salt, pepper, and soy sauce if using.
5. Slowly drizzle in beaten egg while stirring (optional).
6. Garnish with spring onions and serve hot.
