Ingredients
For the Grilled Halloumi:
- Halloumi cheese, cut into thick cubes
- Olive oil
For the Greek Salad:
- Cherry tomatoes, halved
- Cucumber, sliced
- Red onion, thinly sliced
- Kalamata olives
- Fresh parsley, chopped
- Lemon juice
- Olive oil
- Dried oregano
- Salt & black pepper
For the Tzatziki:
- Greek yogurt
- Cucumber, finely grated
- Garlic, minced
- Fresh dill or parsley
- Lemon juice
- Olive oil
- Salt & pepper
For the Side:
- Fluffy white rice
Instructions
Brush halloumi cubes with olive oil and grill until golden and crispy on the outside. Meanwhile, mix cherry tomatoes, cucumbers, red onions, olives, and parsley with a splash of lemon juice, olive oil, oregano, salt, and pepper to make a vibrant Greek salad. For the tzatziki, stir grated cucumber, garlic, herbs, lemon juice, and olive oil into Greek yogurt and season to taste. Serve the grilled halloumi with warm rice, a scoop of tzatziki, and a generous portion of the salad.
Notes & Variations
Swap rice for quinoa or couscous for variety. Add avocado for creaminess or chickpeas for protein. Tzatziki can be prepped ahead and chilled for extra flavor.
