Sunny Side Up Breakfast Bowl

Ingredients:

  • 2 eggs, fried sunny side up
  • 1/2 cup fresh strawberries
  • 1 kiwi, peeled and sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 cup baby spinach or greens (lightly sautéed or fresh)
  • 1 tsp olive oil or butter
  • Salt & pepper to taste
  • Optional: nuts, raisins, or seeds for garnish

Instructions:

 

Heat a nonstick skillet with a little olive oil or butter. Crack the eggs and cook sunny side up until the whites are set and yolks are runny.

 

Lightly sauté spinach (optional) or keep it fresh.

 

In a serving bowl, arrange the eggs, spinach, cherry tomatoes, strawberries, and kiwi slices.

 

Sprinkle eggs with salt, pepper, and herbs or seeds if desired.

 

Serve immediately for a wholesome start to your day.
