Sunny Avocado Breakfast Plate

 

Ingredients:

  • 1 slice whole grain or sourdough bread, toasted
  • 1 egg (fried sunny side up)
  • 1/2 avocado, sliced
  • 1/2 cup sweet corn (cooked or canned)
  • A handful of cherry tomatoes, halved
  • A handful of fresh blueberries
  • Salt and pepper to taste
  • Mixed sesame seeds for garnish (optional)
  • Fresh basil or spinach leaf for garnish (optional)

Instructions:

1. Toast the bread until golden and crispy.

2. Fry the egg sunny-side up in a non-stick pan. Season with salt and pepper.

3. Slice the avocado and arrange on the plate. Sprinkle with sesame seeds if desired.

4. Warm the corn slightly if using frozen or canned.

5. Slice the cherry tomatoes, and rinse the blueberries.

6. Arrange everything neatly on a plate for a balanced, nutritious, and colorful breakfast.
