Succulent Wet Burritos Recipe

Ingredients:

For the Burritos:

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

For the Sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 1 cup chicken or vegetable broth
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Optional Toppings:

  • Chopped fresh cilantro
  • Diced tomatoes
  • Sliced avocado
  • Sour cream
  • Sliced jalapeños

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.
  2. In a large skillet, heat some olive oil over medium heat. Add the diced onion, minced garlic, and diced bell pepper. Cook until softened, about 5 minutes.
  3. Add the ground beef or turkey to the skillet. Cook until browned, breaking it up with a spoon as it cooks.
  4. Stir in the black beans, cooked rice, ground cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes until everything is well combined and heated through. Remove from heat.
  5. Warm the flour tortillas in the microwave or on a skillet for a few seconds to make them pliable.
  6. Divide the filling mixture evenly among the tortillas. Sprinkle shredded cheese on top of each portion.
  7. Roll up the tortillas, tucking in the ends, to form burritos. Place them seam-side down in the prepared baking dish.
  8. In a small saucepan, heat olive oil over medium heat. Whisk in the flour to make a roux. Cook for 1-2 minutes until lightly golden.
  9. Gradually whisk in the chicken or vegetable broth, followed by the tomato sauce, chili powder, ground cumin, salt, and pepper. Cook, stirring constantly, until the sauce thickens, about 5 minutes.
  10. Pour the sauce over the burritos in the baking dish, making sure they are evenly covered.
  11. Sprinkle additional cheese on top of the sauce if desired.
  12. Bake in the preheated oven for 20-25 minutes, or until the burritos are heated through and the cheese is melted and bubbly.
