Stuffed Pretzels with Ham, Cheese, and Jalapeños: A Savory Twist on a Classic Snack

Ingredients

  • 1 ½ cups warm water (110-115°F)
  • 1 package instant yeast
  • 1 ½ tablespoons sugar
  • 2 teaspoons salt
  • 4 ¼ cups all-purpose flour
  • 6 tablespoons unsalted butter, softened
  • For the Cooking Liquid:
  • 8 cups water
  • ¾ cup baking soda
  • For the Filling:
  • 8 ounces Black Forest ham, diced
  • 8 ounces Swiss cheese, shredded
  • 4 ounces pickled jalapeños, minced
  • For the Egg Wash:
  • 1 egg, beaten
  • 1 tablespoon water
  • For Toppings:
  • Poppy seeds
  • Sea salt

Instructions

  • Make the Dough:
  • In the bowl of a stand mixer with a dough hook attachment, combine the warm water, yeast, sugar, and salt. Let the mixture sit for about 10 minutes, or until it becomes foamy.
  • Add the flour and softened butter to the yeast mixture, then knead on medium speed for about 12 minutes until a smooth dough forms.
  • Cover the dough with a warm, damp cloth and place it in a warm spot to rise for 1 hour, or until it doubles in size.
  • Prepare the Pretzels:
  • Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  • In a large pot or Dutch oven, bring 8 cups of water and the baking soda to a boil.
  • Divide the risen dough into 8 equal portions and roll each into a 16-inch rope. Flatten each rope to about 4 inches wide.
  • Fill the Pretzels:
  • In a small bowl, mix the diced ham, shredded cheese, and minced jalapeños. Spoon about 3 tablespoons of the filling along the center of each dough rope.
  • Tightly roll the dough back up jelly-roll style, pinching the edges together to seal the filling inside.
  • Shape each dough rope into a U shape, then cross the ends over each other, pinching them to form a traditional pretzel shape.
  • Boil and Bake:
  • Place each pretzel, one at a time, into the boiling water and cook for 30 seconds. Remove the pretzels with a slotted spoon and transfer them to the prepared baking sheet.
  • Once all the pretzels are boiled, brush the tops with the egg wash and sprinkle with poppy seeds and sea salt.
  • Bake:
  • Place the baking sheet in the preheated oven and bake for about 16 minutes, or until the pretzels are golden brown.
  • Enjoy the pretzels warm, or let them cool on a wire rack.
