Ingredients

  • 3 cups (360 g) all-purpose flour (or bread flour for more chewiness)
  • 2 tsp instant yeast (or 1 packet active dry yeast)
  • 1 cup (240 ml) warm milk (about 110°F / 43°C)
  • 2 tbsp olive oil (plus extra for brushing)
  • 1 tbsp sugar (to feed the yeast)
  • 1 tsp salt
  • 1 cup fresh spinach (lightly blanched & chopped, or use frozen thawed and squeezed dry)
  • 2 tbsp grated Parmesan (optional, for extra flavor)
  • 1 tsp garlic powder (optional)

Instructions

1. Prepare the Spinach

  • If using fresh spinach: blanch in boiling water for 30 seconds, drain, and squeeze out excess water. Chop finely.
  • If using frozen: thaw and squeeze dry.

2. Activate Yeast

  • In a small bowl, mix warm milk, sugar, and yeast.
  • Let sit for 5–10 minutes until foamy.

3. Make the Dough

  • In a large bowl, combine flour, salt, garlic powder, and Parmesan (if using).
  • Add yeast mixture, olive oil, and chopped spinach.
  • Mix until a dough forms.

4. Knead

  • Knead on a floured surface for 8–10 minutes (or 5 minutes with a stand mixer) until smooth and elastic.
