Ingredients:
1 sheet puff pastry, thawed
1 cup fresh spinach, chopped
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1 egg (for egg wash)
Salt and pepper to taste
1 tablespoon olive oil
Sesame seeds for garnish (optional)
Directions:
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.
In a mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, sautéed spinach, salt, and pepper. Mix until well combined.
On a lightly floured surface, roll out the puff pastry sheet. Cut it into strips about 2 inches wide.
Spoon a small amount of the spinach and cheese mixture onto one end of each strip. Fold the other end over to cover the filling and twist the strips to create a spiral shape.
Place the twisted pastries on the prepared baking sheet. Beat the egg and brush it over the tops of the twists. Sprinkle with sesame seeds if desired.
Bake for 15-20 minutes, or until golden brown and puffed.
Serve warm as an appetizer or snack.
