The Spanish Potato Omelette, also known as “Tortilla de Patatas” or “Tortilla Española,” is a classic dish from Spain. Here’s a simple recipe:

Ingredients:

– 3-4 medium potatoes, peeled and thinly sliced

– 1 large onion (optional)

– 4 eggs

– Olive oil

– Salt to taste

Instructions:

1. _Cook Potatoes_: In a pan, heat olive oil over medium heat. Cook sliced potatoes (and onion if using) until tender but not crispy. Drain excess oil.

2. _Mix Eggs_: Beat eggs in a bowl with a pinch of salt.

3. _Combine_: Add cooked potatoes to eggs and mix gently.

4. _Cook Omelette_: In a pan with a bit of olive oil, pour in the egg-potato mixture. Cook on low-medium heat until edges set. Flip carefully and cook the other side until done.

5. _Serve_: Enjoy warm or at room temperature.
