Skinny Raspberry Oatmeal Bars Ingredients:
- 2 cups old-fashioned oats
- 1 ½ cups whole wheat flour (reduce the amount of flour for fewer points)
- 1 tsp cinnamon
- 4 tablespoons light butter (or substitute with 3 tbsp non-fat Greek yogurt)
- ½ tsp salt
- 1 tsp vanilla extract

Filling:
- 4 cups raspberries (fresh or frozen)

- ¼ cup corn starch
Directions:
- Preheat the oven to 325°F (163°C). Grease or line a 9×13-inch baking dish with parchment paper.
- In a bowl, combine the whole wheat flour, oats, cinnamon, butter (or yogurt), salt, vanilla extract, and sugar substitute. Use a mixer to combine on low for 1 minute, then scrape down the sides of the bowl and mix on medium for 2 minutes.
- Take about 2/3 of the oat mixture and spread it evenly into the prepared baking dish, pressing it down to form a crust.
- Set the remaining oat mixture aside for the topping.
- To make the filling, combine the raspberries, sugar substitute, lemon juice, and corn starch in a separate bowl. Stir until the mixture is uniform and smooth.
- Spread the raspberry filling evenly over the oat crust.
- Sprinkle the remaining oat mixture over the filling as the topping.
- Bake in the preheated oven for 35-40 minutes, or until golden brown.
