Why Make Your Own Mozzarella?

Store-bought cheeses can sometimes contain preservatives or extra salt. Making your own gives you full control over what goes in—and what stays out. Plus, the taste and texture of fresh mozzarella is unbeatable!


What You’ll Need:

  • 4 cups (1 liter) of fresh whole milk – Choose organic or local milk if possible, as it gives the best flavor and nutrients.
  • 1 tablespoon of lemon juice – Helps curdle the milk naturally.
  • 1/4 teaspoon of rennet (vegetable-based or animal-based) – This helps the cheese form properly. You can find rennet in most health food stores or online.
  • 1/2 teaspoon of sea salt – Adds just the right amount of flavor.

How to Make It:

  1. Warm the milk
    Pour the milk into a pot and heat it slowly to about 32°C (90°F), stirring gently.
  2. Add lemon juice and rennet
    Remove the pot from heat. Stir in the lemon juice, then add the rennet and stir gently for 30 seconds. Let it sit undisturbed for 5–10 minutes, until the milk forms a soft curd.
  3. Cut and heat the curd
    Cut the curd into cubes using a knife. Warm the pot again to about 40°C (105°F), stirring gently until the curds firm up a bit more.
  4. Stretch the cheese
    Remove the curds from the whey and knead or stretch them gently with clean hands. When they become smooth and stretchy, you’re done!
  5. Salt and serve
    Sprinkle with sea salt and enjoy warm, or store in the fridge.
