

1 salmon fillet (150–200 g)
½ ripe avocado, sliced
2–3 hard-boiled eggs, halved
5–6 baby potatoes
1 cup mixed greens or arugula
Olive oil
Salt & black pepper
Fresh herbs (parsley, dill)
Lemon juice


Boil baby potatoes in salted water ~12–15 min until tender.
Drain and toss with olive oil, salt, pepper, and chopped herbs.

Season salmon with salt, pepper, and a drizzle of olive oil.
Pan-sear or grill ~3–4 min per side until cooked through.
Optional: squeeze lemon juice over it.

Arrange greens in your bowl.
Add sliced avocado.
Place cooked salmon fillet in the center.
Add herbed potatoes and halved eggs.

Sprinkle fresh herbs.
Add extra black pepper and a squeeze of lemon juice.
