Instructions Prepare the Cheesecake Ice Cream Base:
In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
Mix in the vanilla extract and rose water until well combined.
Gradually whisk in the whole milk and heavy cream until the mixture is completely smooth.
Cover the bowl and chill the mixture in the refrigerator for at least 2 hours (or overnight) to ensure it’s thoroughly cold. Prepare the Pistachio Swirl:
In a small bowl, combine the pistachio paste, powdered sugar, and heavy cream. Stir until the mixture is smooth and well blended. Set aside. Churn the Ice Cream:
Pour the chilled cheesecake ice cream base into your ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
If you don’t have an ice cream maker, pour the mixture into a shallow container and freeze, stirring every 30 minutes for 2-3 hours to break up ice crystals. Incorporate the Pistachio Swirl:
Once the ice cream is churned, transfer it to a large mixing bowl.
Gently fold in the pistachio swirl to create beautiful, marbled ribbons throughout the ice cream.
If desired, fold in the chopped toasted pistachios for extra crunch. Freeze to Set:
