Quinoa Kale Chickpea Power Bowl recipe
Ingredients:
For the bowl:
- – 1 cup quinoa, uncooked
- – 1 bunch kale, stems removed and chopped
- – 2 cups cooked chickpeas
- – 1/4 cup red onion, finely diced
- – 2 tablespoons hemp seeds (optional)
- – 1/4 cup dried cranberries (optional)
For the dressing:
- – 1/4 cup olive oil
- – 2 tablespoons lemon juice
- – 1 tablespoon Dijon mustard
- – 1 clove garlic, minced
- – 1 teaspoon honey
- – 1/2 teaspoon red pepper flakes
- – Salt and black pepper to taste
For garnish:
- – Extra virgin olive oil
- – Fresh cracked black pepper
- – Sea salt flakes
Instructions:
1. Cook quinoa:
– Rinse quinoa thoroughly

– Let cool to room temperature
