This refreshing quinoa and celery salad is a copycat of Costco’s cult favorite. Packed with plant-based protein and nutrient-dense greens, it’s an easy make-ahead dish that keeps well for days. The apple cider vinaigrette adds a punch of flavor, while celery gives a satisfying crunch.

Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 2 cups chickpeas
  • 4 cups kale, chopped
  • 2 cups red cabbage, shredded
  • 1½ cups celery, diced
  • 1 cup shredded carrots
  • ½ red onion, sliced
  • ½ cup dried cranberries
  • ½ cup slivered almonds
  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • Salt and black pepper to taste

Directions:

1 Cook quinoa in broth until liquid is absorbed, about 12–15 min.

2 In a bowl, mix veggies, chickpeas, and quinoa.

3 Shake dressing in jar, pour over salad, and mix.
