Quick Pineapple Chicken and Rice (Small Batch)

 

Ingredients:

  • ½ lb chicken breast, cubed
  • ½ cup pineapple, cubed
  • 1 cup cooked white rice
  • 1 tbsp soy sauce
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • 2 tbsp chopped green onions
  • Salt and pepper, to taste
  • Optional: pinch of red chili flakes

Instructions:

1. Heat oil in a pan over medium heat.

2. Sauté garlic until fragrant (about 30 seconds).

3. Add chicken, season with salt and pepper, and cook until no longer pink (about 5–6 minutes).

4. Stir in pineapple and soy sauce. Cook for 2–3 more minutes.

5. Serve over cooked rice.

6. Garnish with green onions and chili flakes if desired.
