Pistachio Cake

Ingredients:

2 cups flour
1 tsp baking powder
½ tsp salt
1 cup shelled pistachios
1 cup sugar
¾ cup butter
3 eggs
1 tsp almond extract

Instructions:
Grind pistachios into a flour-like consistency.
Mix dry ingredients, then cream butter and sugar.
Beat in eggs and almond extract.
Fold in pistachios. Bake at 350°F (175°C) for 30-35 minutes.
A slice of this cake reveals a moist, light-green crumb dotted with pistachios.
