Ingredients
- 1 cup butter (2 sticks), room temp
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 2 eggs
- ½ teaspoon vanilla extract
- 1 (3.4 oz) instant pistachio pudding
- 2 ⅓ cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted pistachios, roughly chopped
- ½ cup white chocolate chips
Preparation
- Preheat oven to 350 degrees F and grease an 8×8-inch baking dish.
- In a large bowl, mix butter, brown sugar, and granulated sugar until light and smooth. Mix in eggs, vanilla, and pistachio pudding mix.
- In a small bowl, sift together flour, baking soda, and salt, then slowly add dry ingredients to the wet.
- Fold in pistachios and white chocolate chips.
- Transfer to the prepared baking dish and bake for 25-28 minutes or until blondies are cooked through the center.
- Allow blondies to cool for at least 30 minutes before cutting.
