Pesto Chicken Flatbread with Cherry Tomatoes and Mozzarella
Ingredients:
- 2 flatbreads or naan
- 1/2 cup basil pesto
- 1 cup cooked chicken breast, shredded or chopped
- 1/2 cup cherry tomatoes, halved
- 3/4 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- 1 tsp olive oil
- Fresh basil leaves, for garnish
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place flatbreads on the sheet and spread each with a layer of pesto. Top with shredded chicken, cherry tomatoes, mozzarella, and a sprinkle of Parmesan.
Drizzle lightly with olive oil and bake for 10–12 minutes, or until cheese is melted and edges are golden.
Garnish with fresh basil before serving. Slice and enjoy warm.
