Ingredients for Perfect Lemon Curd
- One-fourth cup of freshly squeezed lemon juice
- Half a cup of white sugar
- ½ cup diced unsalted butter
- Three big eggs
- One tablespoon of finely chopped lemon peel
Guidelines
- In a 2-quart saucepan, mix together lemon juice, sugar, butter, eggs, and lemon zest.
- Stirring frequently to keep the eggs from curdling, cook over medium-low heat for 5 to 6 minutes, or until the mixture begins to grow thick and bubbles start to rise to the surface.
- Take the saucepan off of the burner, then move the curd into a big basin. Cover the bowl with plastic wrap to keep a skin from forming. As it cools, the curd will get even thicker. Place in the fridge.
