Ingredients:

For the Crust:

✔️ 6 tbsp melted unsalted butter

✔️ ¼ cup granulated sugar

For the Filling:

✔️ ½ cup packed brown sugar

✔️ ¼ cup cornstarch

✔️ 2 cups full-fat milk

✔️ 3 large egg yolks

✔️ 2 tbsp unsalted butter

✔️ ½ tsp vanilla extract

✔️ ½ cup chopped pecans

For the Whipped Topping:

✔️ ½ cup heavy whipping cream

✔️ ½ tbsp powdered sugar

✔️ ⅛ tsp vanilla extract

 

Garnish:

✔️ ½ cup whole pecans

✔️ Caramel sauce drizzle (optional)

 

Instructions:

 

1️⃣ Prepare the Crust:

 

Preheat oven to 350°F (175°C).

 

Mix graham cracker crumbs, sugar, & melted butter until evenly coated.

 

Press into a 9-inch pie plate & bake for 10 mins. Let cool completely.

 

2️⃣ Make the Cream Filling:

 

In a pot, whisk brown sugar & cornstarch.

 

Slowly whisk in milk & cook over medium heat until thickened.

 

In a separate bowl, whisk egg yolks. Gradually add some hot mixture to temper, then return to the pot.

 

Cook 2-3 mins, stirring constantly. Remove from heat & mix in butter & vanilla.

 

Fold in chopped pecans & pour into cooled crust.

Beat heavy cream, powdered sugar & vanilla on medium-high until stiff peaks form.

 

Spread over cooled pie.
