INGREDIENTS :

1 3/4 cup (265g) all-purpose flour

1½ tsp baking powder

3/4 tsp baking soda

1 1/4 sticks butter (2/3 cup/141g) (softened)

3/4 cup (165g) sugar

3 large eggs

½ cup (120ml) milk

3 oz (90ml) orange juice

Zest from 1 orange

INSTRUCTIONS :

 

Grease and flour an 8-in x 4-in loaf pan or 8-inch baking tin. Preheat oven to 350°F (180°C).

Into a medium-sized bowl, sift together the all-purpose flour, baking powder, and baking soda. In a large bowl, cream sugar and butter until creamy and light. It’ll take two to three minutes to complete. One egg at a time, beat in until well blended. Pour in half of the milk, half of the orange juice, and half of the flour mixture. Beat slowly. Next, incorporate the leftover flour mixture, milk, and orange juice. Beat continuously until combined. Add orange zest and fold in. Fill prepared pan with batter. A wooden pick inserted in the center should come out clean after 55 minutes of baking. Take out of the pan and let cool on a wire rack after 10 minutes in the pan.
