Ingredients:

 

✔️ 1 cup orzo pasta

✔️ 2 cups broccoli florets (fresh or frozen)

✔️ 4 cups vegetable broth

✔️ 1 cup shredded cheddar cheese

✔️ 1 tbsp olive oil

✔️ 1 onion, chopped

✔️ 2 cloves garlic, minced

✔️ 1 tsp dried thyme

✔️ Salt & black pepper, to taste

✔️ Optional: Fresh parsley, extra cheese, or lemon juice

 

Instructions:

 

1️⃣ Sauté the Aromatics:

 

Heat olive oil in a large pot over medium heat.

 

Add chopped onion & sauté 3-4 minutes until softened.

 

Stir in garlic & thyme; cook for 1 minute until fragrant.

 

2️⃣ Cook the Orzo:

 

Add orzo pasta & vegetable broth.

 

Bring to a gentle boil, then reduce heat.

 

Cook 8-10 minutes, stirring occasionally, until orzo is tender & most liquid is absorbed.

 

3️⃣ Add Broccoli:

 

Stir in broccoli during the last 5 minutes of cooking.

 

Let it cook until tender but still vibrant green.

 

4️⃣ Melt the Cheese:

 

Reduce heat to low & stir in cheddar cheese until smooth & creamy.

 

Season with salt & black pepper to taste.
