Oatmeal Cookies
Ingredients:
– 1 cup rolled oats
– 1 ripe banana, mashed
– 1/4 cup unsweetened applesauce
– 1/4 cup almond butter (or any nut butter of your choice)
– 1/4 cup honey or a sugar substitute (like stevia or erythritol)
– 1 teaspoon vanilla extract
– 1/2 teaspoon cinnamon
– 1/4 teaspoon salt
– Optional: 1/4 cup dark chocolate chips or dried fruit (like raisins or cranberries) for added flavor.
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the mashed banana, applesauce, almond butter, honey, and vanilla extract. Mix until smooth.
3. Add the rolled oats, cinnamon, salt, and any optional ingredients (like chocolate chips or dried fruit) to the mixture. Stir until well combined.
4. Scoop spoonful’s of the mixture onto the prepared baking sheet, flattening them slightly.
5. Bake for 10-12 minutes, or until the edges are golden brown.
