Ingredients:

  • 60g gluten-free rolled oats
  • 170 g white chocolate
  • 1 lemon, preferably Sicilian (juice and zest)

Preparation method:

Toast the oat flakes in a skillet over low heat for 3 to 4 minutes.

Melt the white chocolate in a bowl over a double boiler. You can also use the microwave, heating in 30-second increments, being careful not to burn it.

Add the lemon zest to the melted chocolate, along with half of the juice. Mix well. 

Then add the remaining juice and mix again until smooth.

Add the chocolate and lemon mixture to the toasted oats and stir until well combined.

Using a large, damp spoon, shape the cookies into round shapes, making them uniform in size.

Arrange the cookies on a baking sheet lined with parchment paper and sprinkle more lemon zest on top.

Refrigerate for at least 15 minutes before serving.
