Mushroom Toast with Eggs, Spinach & Avocado

 

Ingredients:

  • 1 slice sourdough bread
  • 1 cup mushrooms, sliced
  • 2 eggs
  • 1 cup fresh spinach
  • ½ avocado
  • 1 tomato, sliced
  • Olive oil, salt, pepper, parsley

Instructions:

 

1. Toast bread until crispy.

 

2. Sauté mushrooms in olive oil, season with salt and pepper, and place on toast.

 

3. Boil eggs to medium-soft, peel, and halve.

 

4. Sauté spinach with a touch of oil until wilted.

 

5. Assemble plate: mushrooms on toast, spinach, sliced tomato, halved eggs, and avocado.

 

6. Garnish with chopped parsley and black pepper.
