Mini Reuben Potato Bake

Ingredients:

  • 2 large potatoes, thinly sliced
  • ½ lb corned beef or pastrami, sliced
  • ½ cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup mayonnaise or Russian dressing
  • 2 tbsp chopped onions
  • Salt & pepper, to taste

Instructions:

1. Preheat oven to 375°F (190°C).

2. Grease a smaller baking dish (8×8 inch).

3. Layer potatoes, corned beef, sauerkraut, onions, and cheese. Repeat, finishing with cheese on top.

4. Spread mayonnaise or Russian dressing evenly over the top.

5. Cover with foil and bake 40 minutes. Remove foil and bake 10 more minutes to brown.

6. Cool slightly, slice, and enjoy!
