Mini Mediterranean Cheesy Taco Pasta (1–2 servings)

 

Ingredients:

1/2 cup pasta

1 tsp olive oil

1 garlic clove, chopped

1/4 cup ground meat (or chickpeas)

1/4 cup chopped tomatoes

1/4 tsp taco seasoning (or cumin + paprika

1/4 cup water

A few black olives, sliced

A handful of cheese (mozzarella + feta)

Steps:

1. Cook garlic & meat in oil (2–3 mins).

2. Add pasta, tomatoes, seasoning, water.

3. Simmer covered 10 mins, stir occasionally.

4. Add olives + cheese, melt & serve.
