Mediterranean Stuffed Zucchini Boats

Ingredients:

  • 4 medium zucchini, halved + scooped
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • ½ lb ground lamb
  • ½ cup cooked rice
  • ¼ cup toasted pine nuts
  • 1 tomato, diced
  • 2 tbsp parsley, chopped
  • 1 tbsp mint, chopped
  • ½ tsp cumin + ½ tsp smoked paprika
  • Salt & pepper
  • ½ cup crumbled feta
  • ¼ cup Parmesan
  • Kalamata olives + fresh dill (garnish

Instructions:

1. Prep Zucchini:

Preheat oven to 375°F (190°C).

Scoop zucchini, brush with oil, and bake 10 min. Chop the scooped flesh.

2. Make Filling:

Sauté onion in oil (3 min), add garlic (30 sec).

Add lamb, brown (5 min).

Stir in zucchini flesh, tomato, rice, pine nuts, herbs, spices. Cook 3–4 min.

3. Stuff & Bake:

Fill zucchini, top with feta + Parmesan.

Bake 20–25 min, until golden.

4. Garnish & Serve:

Top with olives + dill. Serve with tzatziki or Greek salad.
