Mediterranean Oven-Baked Cauliflower

 

Ingredients:

  • 600 g cauliflower, cut into bite-sized florets
  • 1 egg
  • 150 g plain Greek yogurt (or thick natural yogurt)
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp dried oregano
  • 1/4 tsp dried thyme (optional)
  • 1 clove garlic, finely minced or grated (or 1/2 tsp dried garlic)
  • 50 g crumbled feta cheese (or shredded mozzarella for a milder taste)
  • Fresh parsley or basil, chopped (for garnish)

Instructions:

 

1. Preheat your oven to 200°C (392°F). Grease a baking dish with a little olive oil.

 

2. Blanch the cauliflower:

 

Bring a pot of salted water to a boil.

 

Add cauliflower florets and boil for just 1–2 minutes until slightly tender.

 

Drain and set aside to cool slightly.

 

3. Make the Mediterranean sauce:

 

In a large bowl, whisk together the egg, Greek yogurt, olive oil, salt, pepper, oregano, thyme, and garlic.

 

4. Combine:

 

Add the cauliflower to the yogurt mixture. Toss gently until the florets are well coated.

 

5. Assemble and top:

 

Transfer everything to the greased baking dish.

 

Sprinkle the top with feta cheese evenly.

 

6. Bake for 20–25 minutes, or until the cauliflower is golden and the top is bubbly and slightly crispy.

 

7. Garnish with chopped fresh parsley or basil before serving.

 

 

Serving Tips:

 

Enjoy it warm as a vegetarian main with pita or couscous.

 

Or serve as a side dish with grilled fish, lamb, or chicken.

Add sun-dried tomatoes, chopped olives, or a touch of lemon zest for extra Mediterranean flair.
