Mediterranean Honey-Lime Chicken & Avocado Rice Stack

 

A vibrant and wholesome stacked meal with tender chicken, fragrant rice, creamy avocado, and a drizzle of honey-lime dressing—Mediterranean flair guaranteed!

 

Ingredients (Serves 2)

 

For the Chicken:

  • 2 chicken breasts or 300g boneless thighs, sliced
  • 2 tablespoons honey
  • Juice and zest of 1 lime
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano or thyme
  • 1/4 teaspoon paprika or sumac
  • Salt and black pepper, to taste

For the Rice:

  • 1 cup basmati or jasmine rice, rinsed
  • 2 cups water or vegetable broth
  • 1 tablespoon olive oil or butter
  • 1/4 teaspoon salt
  • 1 tablespoon chopped parsley or dill (optional)
  • Zest of ½ lemon or lime

For the Avocado Layer:

  • 1 ripe avocado, thinly sliced
  • 1 tablespoon olive oil
  • Juice of ½ lime
  • Pinch of salt
  • Optional: chopped mint or basil for extra freshness

Instructions

 

1. Marinate the Chicken:

 

In a bowl, combine honey, olive oil, lime juice and zest, minced garlic, oregano, paprika, salt, and pepper.

Add sliced chicken and coat well. Let marinate for at least 30 minutes (or up to 4 hours in the fridge).

 

2. Cook the Rice:

 

In a pot, heat olive oil or butter. Add rinsed rice and sauté briefly.

 

Add water or broth and salt, bring to a boil, then cover and simmer on low for 15–18 minutes.

 

Once done, fluff with a fork and stir in lemon/lime zest and fresh parsley or dill.

 

3. Grill the Chicken:

 

Heat a grill pan or skillet over medium heat.

 

Cook the marinated chicken slices 3–4 minutes per side until caramelized and cooked through. Set aside.

4. Prepare the Avocado:

 

In a small bowl, toss sliced avocado with olive oil, lime juice, and a pinch of salt.

 

5. Assemble the Stack (like the image):

 

Use a food ring or small bowl for neat stacking (optional):

 

1. Press a layer of herbed rice into the base.

 

2. Add a layer of seasoned avocado slices.

 

3. Stack the grilled honey-lime chicken on top.

 

4. Garnish with fresh parsley, a slice of lime, and a light drizzle of leftover honey-lime mixture.
